I love banana bread and for that reason I am on a mission to find the best recipe! Typically I have stuck to this recipe that I found in an aerobic instructor cookbook. The cookbook is from the Reno Athletic Club and I’m pretty sure my parents dumped on me when they were cleaning out their kitchen (After all, the R.A.C. on Matley Lane has been closed for years). But it’s a good recipe and makes two loafs, but I wanted to expand my horizons and make sure there wasn’t something I was missing out on. Over the last couple weeks I have made several other recipes, sharing my findings below:

Moist Banana Bread- This one has interesting ingredients like sour cream and lemon juice so I thought I would give it a shot. I like sour cream and lemons so why not? Well it was too different for my taste and made me realize that I was looking for a more classic style of bread. This one just didn’t have a strong enough banana taste for me. More like banana flavored white bread. I needed to find something that shouted BANANA!

Banana Banana Bread– I wanted to find something with a lot of banana flavor and that is when I stumbled upon Banana Banana Bread. With a name like that how could I go wrong? Well I will tell you…although tasty, it didn’t rise very much and made about a half of loaf. Now if I am going to make banana bread I want to get the most out of it so this wasn’t going to work. It also used brown sugar instead of regular sugar and I’m not quite sure what the difference is in cooking. On to the next recipe…

Banana Bread w/out Peacans 🙂– This one was pretty tasty. I think it has to do with the mixture of the smashed bananas and the mixed bananas. I also added an extra banana! Maybe if I did this to the first recipe it would be better.

Banana Bread– To me, this is more of a classic style bread and is very moist (more so than the Moist Banana Bread recipe above).

In conclusion, there are no bad banana bread recipes! Whew, I know you were all at the edge of your seats. You can rest easy now. I think I will stick with my original recipe but alter it a little, hopefully combining everything I liked about each of the recipes above. I will also change the recipe a little so when I scarf it down so quickly I don’t feel as guilty. I will do this by using egg beaters, wheat flour and substituting half of the butter with apple sauce. I will also use a little less sugar. I don’t think these things make for a huge taste difference, still delicious!
